It’s safe to say that my love for the average cucumber doesn’t run deep. Until recently, I thought they were pretty worthless. After all, cucumbers don’t offer a huge nutritional value. As it turns out, they have a lot of great benefits. I was wrong. (Don’t worry, it won’t be the last time!)

Healthy, Oil-Free Cucumber Bruschetta

This guilt-free, non-traditional take on bruschetta is super easy. It's a perfect recipe for impromptu summer gatherings or preplanned potlucks. I'll guarantee you'll come back for seconds. 

Servings: 4 servings
  • 2 cucumbers, medium sized, diced
  • 1 tomato, fresh, diced
  • 2 tsp red wine vinegar
  • 2 tbls garlic, minced adjust to taste
  • salt and pepper adjust to taste
  • 1 multi-grain baguette, sliced toasted
  1. Gently mix all the ingredients into a large bowl, with the exception of the baguette.

  2. Once the bruschetta is ready, top your slices of toasted baguette and enjoy.
