
It’s safe to say that my love for the average cucumber doesn’t run deep. Until recently, I thought they were pretty worthless. After all, cucumbers don’t offer a huge nutritional value. As it turns out, they have a lot of great benefits. I was wrong. (Don’t worry, it won’t be the last time!)

This guilt-free, non-traditional take on bruschetta is super easy. It's a perfect recipe for impromptu summer gatherings or preplanned potlucks. I'll guarantee you'll come back for seconds.
- 2 cucumbers, medium sized, diced
- 1 tomato, fresh, diced
- 2 tsp red wine vinegar
- 2 tbls garlic, minced adjust to taste
- salt and pepper adjust to taste
- 1 multi-grain baguette, sliced toasted

Gently mix all the ingredients into a large bowl, with the exception of the baguette.

Once the bruschetta is ready, top your slices of toasted baguette and enjoy.
